I’m not your typical chocolate-loving, dessert-eating kind of girl, but I love to bake. The idea of creating edible things that make people happy (aka desserts) is all the more intriguing for me to want to bake. And usually with desserts, they get to be colorful, decorated and fancy, which is totally exciting. Browsing around online this week I found a recipe for chocolate peanut butter cups. About 99% of everyone I know loves the rich chocolate and pb mixture, so this was definitely my next creation. As simple as these steps are to create, they’re tedious and take a decent amount of time, considering you aren’t waiting on an oven for them to bake. But all said and done, I’m so happy with my newest dessert creation. Enjoy!
What’s your favorite no-bake desserts to make?
- 3 cups chocolate
- 1 cup peanut butter
- 1/2 cup powdered sugar, sifted
- 1/4 cup graham crackers, crushed
- 1 teaspoon sea salt
Line cupcake pan with paper liners
Melt 1/2 the chocolate in a microwave safe bowl until fully melted, stirring every 30 seconds so it won’t burn
Using the back of a spoon, layer the melted chocolate on the insides of the cupcake liners (bottom and sides)
Put the cupcake pan in the fridge to harden, approx 20 minutes
In a bowl mix together: peanut butter, powdered sugar, graham crackers and salt
Mix until completely blended together
Melt remaining chocolate in microwave
Separate peanut butter mixture into equal parts onto wax paper or foil (so it won’t stick to counter)
Remove cupcake pan from fridge and place 1 peanut butter portion in each chocolate lined cup
Lightly press peanut butter down into the cups, so it fills most the empty space
Using remaining melted chocolate fill up the remainder of the cupcake cups with chocolate
Use the spoon to smooth out the tops of the cups, completely covering the peanut butter
Place cups back into fridge, as least 1 hour to harden, and serve
